Hi everyone, and welcome to this experiment!

After many years living and working in the Silicon Valley my family and I relocated to Long Island, NY in 2009. Yes, it is a big change. A change that can either literally freeze your heart or transform your soul. During this process of change I have shelter myself into sharing more quality time with my family, reading, going back to college, and cooking. I love food. Not just for the mere reason of eating it,but because I find fascinating the way in wich flavors and textures are combined to form a piece of art. Art that bring people together and feeds the heart as it feeds your stomach.
In this blog you will enjoy the puertorrican flavors added to different meals you may already know. In addition I will share some traditional recipes with my own touch. And will ask my mom permision to share some of hers.
Flavors from Puerto Rico are vibrant and that's what we all need to spark a meal and enjoy it. Sharing this fantastic art with family and friends is a way to open a window to my Caribbean culture.

Slow Cooked Chicken (Pollo)

If you got to go for a long work day.... don't wait until you come back home to cook! That is what I used to do. Not anymore! What you need is a CROCK POT. This magical instrument will take care of  your dinner for you. I love this tool because it collects all the flavors that are added in it and blends them in a wonderful way. Giving almost any plate a soft texture and a rich flavor. Remember you add the flavor not the pot. My kids love it!
This past weekend I prepared  dinner for my family at 1:00 PM. I got my crock pot, and all my ingredients ready. Set all up. Had fun with the kids and later on we were ready for dinner. It turned out great!
Ingredients:
- 1 Whole Organic Chicken
- 1 lemon (to wash the chicken before cooking)
- 10 garlic cloves ( smashed in a mortar)
- 1/2 cup squash in cube shaped pieces
- 1 cup of chopped spinach (washed)
- 1/2 cup red potatoes in cube shaped pieces
- 1/2 cup washed white mushrooms
- 1/4 cup raisins
- 2 cups chicken broth (I use Knorr)
-1/2 cup cilantrillo
-1/4 cup red wine of your like 
-  1 bag of powder seasoning (Goya) with color
- 2 TSP olive oil
-  adobo (Goya) and salt to taste
- a quarter of a small onion
That is quite a list of ingredients, but I tell you is worth it and probably you do have some of the ingredients at home anyway. 
OK lets get it done.
1. First wash the chicken with fresh water  and then with the fresh lemon juice.
2. Make 4 incisions on the chicken breast, and one on each leg.  Introduce a little garlic in each one of the cuts.
3. Prepare the condiments:
In a separate plate add cilantrillo, adobo, salt,more garlic and color seasoning. Mix. Then add olive oil, and mix again.  
4. Use half of the mixture to put at the bottom of the pot.  Add the onion.
5. Place the chicken in the pot. Breast down so it can absorb the juices and flavors from the bed of  condiments.
6. Spread the other half of mixture on top of the chicken.
7. Carefully add the mushrooms, spinach, squash and potatoes to the pot. Distribute them inside the pot evenly.
8. Add the chicken broth slowly to the pot.
9. Before putting the lid on add the touch of red wine over the chicken.
10. Let it cook for about 4 hrs. The time will depend on your crock pot. Make sure that there is always liquid in the pot.

Toasted french bed with butter
Green salad of your choice
Steam rice
Wine:
Beaujolais

  4. Friends of Carmen,

    We could not wait longer and asked Carmen to go for the slow cooked chicken again, it is like the new "pollo guisao" of our times, still my favorite plate. This time she added a few magic powders, and taste got even better. The new rice has some type of grassroots vege. By accident, my son Alejandro grabbed my assigned chicken breast, and I ended up with the juicy leg! I promise that jogging will take care of it.

    In summary, it has become one of our favorite family dishes, and I recommend you all try it out.

  5. I found "recao puertorriqueno" ! It adds so much fresh earthy flavors to the meal. it is just amazing. It enhance the flavor of the creamy mushroom rice and also the slow cooked chicken.
    The down is that you want to eat more.
